5-minute Cake

Looking for an easy-peasy-lemon-squeezy weekend treat idea? Last night I made Fay's icebox cake. I've been crazy for mascarpone cheese lately so instead of using whipped cream, I mixed in a bit of espresso into the mascarpone. Also, I went with Fay's idea of using gingersnap cookies for the base instead of wafers and it was magic! (I got those from Ikea). Balazs and my friend Sofia loved it. Lovelies, I'm curious, what you've been craving lately? xo
