It's time for Foodie Friday at Designs by Gollum.
One of our favorite comforting meals is called poulet'.
It's a delicious chicken casserole that is easy to make.
Add a fresh green salad and you are ready to serve.
10 ou package of Pepperidge Farm stuffing
1 cup of chicken broth
1 1/2 cups of milk
1/2 cup of mayo
1/4 cup chopped onion
1/cup chopped celery
1/2 stick of melted butter
3 cups boiled tender chicken
2 eggs
Chop the onion into fairly small bite sized pieces.Boil the chicken breasts.
You want them to stay moist.
I like the chicken to stay in decent chunks.
You may shred it or cut it smaller if you prefer.
Mix all ingredients in a large bowl.I like mine very moist so I add more broth.
Add S/P to taste.
Transfer to your ovenware dish.
Topping:
1 can cream of mushroom soup
1 cup of shredded cheddar cheese
Spread soup and sprinkle the cheese on the top.
Bake at 325 degrees for 45 minutes.Yummy!
